There’s lots of excellent reasons to take a tour round Wales. One of them must be to discover just how good Welsh cheeses are! Wales has a proud reputation for some of the finest cheeses anywhere in the world.
The earliest varieties were made from goat and sheep’s milks soaked in brine. It was only later in the 17th and 18th centuries that cow’s milk became the Welsh cheese-making ingredient of choice.
The Big Cheese in Wales in AD 880 – 950 was Hywel Dda (Hywel the Good) king of Dyfed, Powys and Gwynedd. This enlightened ruler is forever linked with the development of the Welsh laws, usually known as the Laws of Hywel Dda which were remarkably just for their time.
An astonishing respect for women and plenty of common sense featured strongly in the laws. So much so that women got a fair half share of any divorce settlement, with cheeses that were washed in brine going to the wife while the husband was left with the cheeses that were hung up.
By 1945, cheese making in Wales was in serious decline (not sure about the divorce rate or alimony arrangements) with many small Welsh cheese producers unable to compete with larger English factories.
Today, a new generation of Welsh cheese makers has been handed the curd cutter and although Caerphilly is the only truly traditional Welsh cheese still made, there are many modern farmhouse cheeses that offer a whole new taste experience.
Throughout South East, Mid and North Wales, small dairies and dedicated enthusiasts are winning awards and re-establishing Wales’ cheese making reputation. Here are just a few:

Where can I buy these Welsh cheeses in America. I hear Collier extra sharp Welsh cheddar is in Whole Foods,and may soon be in Wegmans.
Several slices of Welsh bacon, some leeks and these cheeses oh how fabulous would that be? Ship ‘em over to the States please.
